Today we are bringing the charm of a French bakery into our own kitchen by making a homemade French baguette. This long golden bread is loved for its crisp surface, soft center, and light texture. Although it looks simple, creating a beautiful baguette requires careful preparation and patience.
With only a few basic ingredients, we can transform flour, water, salt, yeast, and honey into fresh bread with a wonderful aroma.
The secret is not complicated equipment but giving the dough enough time to rest and develop. When we finally enjoy a warm slice, we can feel the care behind every step.

About Our Homemade Baguette

A French baguette is a traditional long bread with a thin golden crust and an airy inside. It can be enjoyed for breakfast, a family meal, or a simple snack during the day. This recipe makes three baguettes, providing around 12 servings.
The preparation takes about 30 minutes, while baking requires around 30 minutes. The dough also needs a resting period of 12 to 14 hours. This longer fermentation time helps create a deeper flavor and a better texture.

Ingredients We Prepare

Before baking, we prepare the following ingredients:
- All-purpose flour: 500 grams, about 3 1/2 cups.
- Water: 360 grams, about 1 1/2 cups plus 1 tablespoon.
- Salt: 10 grams, about 2 teaspoons.
- Instant yeast: 3 grams, about 1 teaspoon.
- Honey: 25 grams, about 1 tablespoon.
For better results, we recommend measuring ingredients with a kitchen scale. Flour can have different moisture levels depending on storage, so accurate measurements help us create a more consistent dough.

Step 1: Mix the Dough

1. First, we place the flour, water, salt, yeast, and honey into a large mixing bowl. We stir the ingredients together until the flour absorbs the water and a rough dough forms.
2. Cover the bowl and allow the dough to rest for 15 minutes. This short resting time helps the flour absorb moisture and makes the dough smoother.
3. After resting, we begin strengthening the dough. Over the next 90 minutes, we complete three rounds of stretching and folding. For each round, we gently pull one side of the dough, fold it toward the center, turn the bowl, and repeat the process.

Step 2: Overnight Dough Rest

1. After completing the stretching and folding process, we cover the bowl carefully and place it in the refrigerator.
2. The dough rests for about 12 to 14 hours. During this time, the ingredients slowly combine and create a more enjoyable flavor. The next day, we remove the dough and prepare it for shaping.

Step 3: Shape the Baguettes

1. We lightly cover the work surface with flour and place the dough on it. Divide the dough into three equal pieces.
2. Shape each piece into a rectangle, cover them, and let them rest for 45 to 60 minutes.
3. Next, we gently stretch each rectangle and fold it into a long cylinder shape. Press the seam together to keep the shape secure. Then roll each piece carefully with our hands until it reaches about 14 to 15 inches long.

Step 4: Final Rise and Oven Setup

1. Place the shaped baguettes on a lightly floured cloth with the seam side facing upward. Cover them and let them rise at room temperature for 30 to 60 minutes.
2. While the dough rises, we prepare the oven. Preheat it to 500°F. Place a baking tray near the upper area of the oven and prepare another tray with hot water on the lower rack.
3. The steam created by the hot water helps the baguettes develop a crisp outer layer while keeping the inside soft.

Step 5: Bake Our Golden Bread

1. Move the baguettes onto baking paper with the seam side facing downward. Remove extra flour from the surface.
2. Using a bread blade, create three diagonal cuts on each baguette. These cuts help the bread expand evenly during baking.
3. Place the baguettes into the oven carefully. Lower the temperature to 475°F and bake with steam for 15 minutes.
4. After that, remove the water tray, rotate the baguettes, lower the temperature to 450°F, and continue baking for another 15 minutes.
5. When the bread becomes deep golden, remove it from the oven and allow it to cool slightly before serving.
